Wallace's of Hemyock is a family farming business in the
picturesque surroundings of the Blackdown Hills, on the Devon-Somerset
border. Designated an Area of Out-standing Natural Beauty and more
recently an Environmentally Sensitive Area, the Blackdown Hills are
ideally suited to producing quality grass and forage required to raise
animals in their natural environment. Our animals are raised without
the use of growth promoters or other modern additives; in fact the
only fertilisers used are those necessary to ensure the long term
fertility of the soil helping to produce animals of fantastic quality
just the way nature intended.
Since arriving in Devon, nearly 20
years ago, the need to market our own farm produce in order to gain
the premiums that our quality stock demanded, meant that our family
had develop new butchering skills. Our ambitious plan to build a fully
licensed processing facility on the farm, which opened in 1993, removed
the necessity to transport our animals over great distances to slaughter,
especially deer, which are so prone to stress. We are convinced that
this one fact has a greater bearing on the quality of the end product
than anything else. On the farm our move back to old-fashioned methods
of husbandry and breeds, with emphasis on stringent welfare codes
of practice has helped us to produce animals of outstanding quality.
Visitors to our farmshop will see
the herds of Red Deer, Bison, & Aberdeen Angus cattle and the flocks
of Sheep, & Bronze Turkeys for Christmas, Chickens and Ducks all enjoying
a Natural life at Hill farm. As well as the butchery we have now completed
a small kitchen and a smokery to develop even more wonderful delicacies,
where we are busy developing wonderful new recipes and meals, to compliment
the finest quality home-produced meat. As well as the Farmshop we
attend many of the local Farmers Markets, and regularly send mail-order
parcels all over Britain.
